Blueberry Cream Cheese Pound Cake

Last Saturday, we had our first Coffee Break and it was so much fun!  (For photos and a recap, click here.)  We had so many yummy treats that were donated.  Thank you to everyone who brought a treat!

I made a Blueberry Cream Cheese Pound Cake and thought I would share the recipe. Enjoy!


Blueberry Cream Cheese Pound Cake

Ingredients:
8oz Cream Cheese
1/2 cup Vegetable Oil
18oz Pkg Yellow Butter Cake Mix
4 Eggs
3oz Instant Vanilla Pudding Mix
2 tsp Vanilla
2 cups Fresh Blueberries

Directions:
1. Preheat oven to 325. Lightly spray bundt pan with cooking spray.
2. Combine cream cheese and oil, beat with mixer at high speed until smooth.
3. Add cake mix, pudding mix, eggs, and vanilla.  Beat at medium speed until well mixed.
4. Fold in blueberries & spoon batter into pan.
5. Bake 70-80 minutes (check with a toothpick)
6. Cool on wire rack for 20 minutes then remove from pan.
